The technique began with the island’s Indigenous Taíno people, who seasoned and slow-cooked meat over open wood fires. In the 17th century, escaped enslaved Africans known as the Maroons adopted and expanded these methods, seasoning wild game with local herbs and spices before smoking it over pimento wood. This process not only preserved the meat but also created the bold, smoky flavor that jerk is famous for today.
Traditional jerk seasoning combines ingredients like allspice (pimento), Scotch bonnet peppers, thyme, garlic, ginger, and scallions.
